Remove the roast from the refrigerator 2-3 hours before cooking.
Preheat the oven to 500º F.
Rub the entire roast with organic seasoned salt besides the bottom (bone-side is the bottom). Make sure the oven rack in the second lowest position.
Place the roast, bone-side down, in a large pan. Coat the top with fresh black pepper, and kosher salt. Roast at 500º F for 45 min then reduce the heat to 320º F for another 30 minutes. After, increase the temperature to 475º F and roast for another 15 to 35 minutes, cook until the center of the roast his 120º F or until it is cooked to your liking.
Once done, remove the roast from the oven, wrap it in foil and allow it to rest for 20 min. Carve and serve.
